This Takizawa K-58 58mm Katsuobushi Bonito Shaver is a traditional Japanese kezuriki designed to shave katsuobushi, dried fermented skipjack tuna used to produce fresh bonito flakes for dashi. The replaceable blade system allows the cutting blade to be removed and exchanged using a screwdriver, supporting long term maintenance and continued precision performance.

It is used to shave katsuobushi blocks for preparing authentic dashi stock, seasoning soups, noodles, tofu, and other Japanese dishes. The 58mm blade width enables smooth, consistent shaving across larger bonito blocks, producing controlled flake thickness suitable for clear broth extraction or topping applications.

The blade can be removed using a screwdriver and replaced when needed. The high grade carbon steel cutting edge ensures clean, controlled shaving. The stable oak body reduces vibration during use and allows consistent flake production required for traditional Japanese stock making.

After use, wipe the blade dry to prevent rust, as carbon steel is not stainless. Do not wash with water. Store in a dry location. Handle the blade carefully and keep out of reach of children. Use only for shaving dried katsuobushi blocks.

Our Return Policy:

Most items can be refunded provided you send your order back to us within 30 days of purchase and if the items returned to us are in an unopened, unused and original condition. If we approve your return, please return the item(s), with your invoice to our address in Japan, and write on your invoice that you'd like a refund, and the reason why. Once we recieve your approved return in an unused, unopened and original condition we will refund you the cost of the item as soon as possible.

We stand behind every product we sell, therefore, should you feel an item has been misrepresented, or is not in the condition as promised, please let us know and we will promptly replace the product, or return it to us for a full refund.
